Fruit Salad

Ingredients:

  • 1 head lettuce
  • 5 tbsp Mayonnaise
  • 1 tbsp lemon juice
  • 2 Fuji apples
  • 5 Rose apples (Jambu), cubed
  • 5 straw berries, cubed
  • 2 kiwis, skinned and cubed
  • 2 oranges, peeled and cubed
  • 2 mangoes, skinned and cubed
  • 20 grapes

Method:

  1. Soak lettuce in iced water for half an hour. Drain and shred coarsely.
  2. Core and cut Fuji apples into cubes and soak briefly in salt water to prevent discoloration.
  3. Place all the cut fruits into a bowl. Add the grapes, mayonnaise and lemon juice and mix well.
  4. Arrange shredded lettuce on a salad bowl and top with the mixed fruits.
  5. Chill and serve cold.

Good morning, broccoli-and-mushrooms-salad !

Ingredients:

2 tomatoes
1/4 long cucumber
1 yellow bell-pepper
6-8 mushrooms
3-4 green onion
1 small broccoli
a slice of organic tofu (optional)
juice from 1/2 lemon
extra virgin olive oil
salt & pepper

 

Method:

Wash all vegetables and cut into small cubes.  The medium size mushrooms can be cut into 4 quarters.

Put all vegetables in a bowl and add grated tofu on top.

Add lemon juice, olive oil, salt and pepper and toss the salad from the bottom up, mixing gently and thoroughly.

You can add salt while you are mixing, so all the vegetables will get enough salt.

It can be eaten in the morning with a slice of whole grains bread or accompanying one of the main dishes/meals of the day.

Guacamole

Ingredients (serves 4):

4 Avocados
2 Large Tomatoes
1/2 Clove of Garlic
1/2 Large Sweet Onion
1 Lemon (or Lime)
1 Handful of Cilantro (aka Coriander or Chinese Parsley)
Salt and Pepper

Method:

1.  Chop garlic, onion, cilantro into fine bits
2.  Dice tomatoes into small pieces
3.  Peel and pit avocados.  Easiest way is to cut avocados into half (length wise), remove seeds, and dig out with a spoon.  Mash avocados up in a bowl.
4.  Mix in chopped garlic, onion, tomatoes and cilantro.
5.  Squeeze lemon juice in and stir well.  You can use less lemon if you like it less sour.
6. Salt and pepper to taste  (a dash is enough)

Voila! Ready to Serve!  Guacamole goes very well with tortilla chips, bread or crackers.
Refrigerate to keep.
